Everyone should have a good collection of holiday recipes even if they don't cook, it makes one feel more in control. Even if you don't have time during the holidays to bake, you really can make cookies and breads at other times of the year. Just think of have gingerbread for the fourth of July.
Speaking of gingerbread, I have recently learned to change the spices in mine. I tried a new recipe that gave new meaning to the term stage planks but I did find I loved the flavor. Now I use ginger with Cardamom and fresh orange peel. I could smell Cardamom all day, what a great discovery. Gingerbread cookies make a lovely addition to a cookie tray. Decorate with white icing so the brown shows through and you have an old fashion treat.
A friend recently gave me some wonderful dried cranberries. They are huge and more moist than what I can usually find in the store. I have also recently indulged myself with a bread machine so I decided to try a cranberry bread, what a great idea it was. I had my way with a recipe from the book Bread Machine Magic by Linda Rehberg and Lois Conway which is a great book.
Cranberry Granola Bread
| 1/2 Cup | Plain granola |
| 3/4 Cup | Plain nonfat yogurt |
| 1/2 Cup | 100% Cranberry Raspberry juice |
| 2 1/2 Cups | Bread Flour |
| 1/2 Cup | Whole Wheat Flour |
| 1 1/2 teaspoons | Salt |
| 2 Tablespoons | Butter |
| 2 Tablespoons | Honey |
| 2 teaspoons | Red Star yeasts |
| 1/2 Cup | Chopped dried Cranberries |
Place all of the ingredients except for the fruit in your pan according to your breadmachine's manual. I use the light crust setting and the sweet bread setting. Put the cranberries in when your machine beeps at you. I also make this bread with dried cherries and a 100% juice, cherry blend which is also wonderful. You can substitute buttermilk for the yogurt and and add 1/4 teaspoon baking soda. Bread is one of those things that can be varied endlessly.

Eggnog Bread
| 3/4 Cup | Eggnog |
| 2 large | Eggs |
| 3 Cups | Bread Flour |
| 1 teaspoon | Salt |
| 2 Tablespoons | Butter |
| 3 Tablespoons | Honey |
| 1 1/2 teaspoons | Red Star Yeast |
Place all of the ingredients in your pan. I set the crust to light and the setting
to sweet bread but use whatever you usually use with your machine. When the bread
comes out, cut off the crust right away to eat telling yourself the loaf will cool faster
that way.
