HONEY - BOURBON BBQ SAUCE
with Chipotle Chili Peppers
Oil – 1 to 2 tablespoons
2 medium (to large) onions, shredded
2 heaping tablespoons garlic, minced
1 cup brown sugar
1 cup honey
1 cup ketchup
Two 6-oz cans of tomatoes paste
2 to 3 tablespoons
chipotle & roasted garlic purée
1 cup Dijon mustard
1 cup orange juice
1 cup apple cider vinegar
1/2 cup Worcestershire sauce
1 tablespoon ground cumin
1-1/2 cups Jack Daniel’s bourbon

Heat oil in heavy large pot over medium-low heat
Add white onions and garlic and saute until tender, about 5 to 7 minutes

Mix in all remaining ingredients, adding bourbon last

Simmer sauce until it thickens and is reduced - stirring occasionally, about 1-1/2 to 2 hours

Season to taste (if needed)
Sauce can be prepared 2 weeks ahead, store in airtight container and refrigerate

Yields about 2-1/2 quarts
