Grill Lemon Chicken
1/4 cup freshly squeezed Lemon Juice
1/2 cup Lemon Oil (
see recipe)
1 teaspoon Dijon Mustard
2 Shallots, finely minced, about 1 tablespoon
1 small bunch of Lemon Thyme, about 1/4 cup
4 medium sized chicken breast, boned & the skin removed 

Combine the lemon juice, lemon oil, mustard & shallots, mix to combine 

Remove the leaves from the lemon thyme to make 1 tablespoon and add to the lemon mixture 

Place the chicken breast in a shallow dish & cover with the remaining lemon thyme (roughly chopped) and pour marinade over the chicken 
Cover and refrigerate for about 1 hour and no longer than four before grilling, rotating the chicken half way through 

Grill chicken on indirect heat until cook through, and serve 

Serves two hungry people or four not so hungry 
Serve with Brown Rice Pilaf or Gorgonzola Sauce (
see recipe) with Pasta
