1/2 cup honey
1 tablespoon soy sauce
2 tablespoons rice wine or white vinegar
1/4 cup oil
2 tablespoons chili powder
1 teaspoon cayenne pepper
The juice & zest of 1 lime
About 2 pounds of chicken wings, soaked in a beer brine over night

1. Combine the first 5 ingredients, mix to blend

2. Drain chicken wings if using a brine

3. In a shallow dish or plastic zip-lock bag place the chicken wings & pour the marinade over the wings to coat

4. Marinade, refrigerated for about 20 minutes or up to 2 hours

Pre-heat oven to 375-400-degrees F

5. Remove the wings from the marinade (reserving for basting), and place in a shallow oven-proof pan

6. Bake the wings (in the center of the oven), turning once and basting as needed with the remaining marinade until cooked thru, about 45 minutes to 1 hour


Cool slightly before serving
