Chipotle Oil
1/2 cup  light Oil, such as Peanut or Canola 
2 Chipotle Pepper  
Preheat oven to 300-degrees F.
Chop the chipotle pepper & place in an oven proof bowl with the oil

Place the bowl on a sheet pan & cook on the lower third of the oven for 1 hour

Cool for 30 minutes and strain

Store in a jar, covered in the refrigerator For about 1 month

Yields 1/2 cup
