1-1/4 CUP GOLDEN RAISINS
1/3 CUP LEMON JUICE & THE ZEST OF ONE LEMON
1TBSP GROUND CINNAMON
4 EACH CINNAMON STICKES, ABOUT 4-INCH LONG
1tsp. GROUND CLOVES
2-1/4 CUPS WHITE VINEGAR
1/2 tsp. CAYANNE PEPPER
1tsp. MUSTARD SEEDS, LIGHTLY TOASTED UNTIL THEY BECOME FRAGRENT
2TBSP DICED CANDIED GINGER
FRESH GINGER & DRIED ANCHO CHILI, OPTIONAL
SUGAR & DRIED PEPPER FLAKES TO TASTE

IN A 5- 6 QT SAUCEPAN, NONSTICK IS GOOD. PLACE ALL INGREDIENTS.

OVER MEDIUM-HIGH HEAT, STIR THE MIXTURE UNTIL IT BEGINS TO BOIL. REDUCE HEAT TO A SIMMER. STIR OCCASIONALLY TO PREVENT BURNING.

COOK UNTIL MIXTURE THICKENS AND REDUCES TO ABOUT 5 CUPS, 1 TO 2 HOURS.

LET COOL, REMOVE AND DISCARD CINNAMON STICK AND SPOON INTO MASION JARS, CHILL UNTIL READY TO USE.

REFRIGERATE UP TO ONE MONTH.
