EASY DEVILED EGGS

6 hardboiled eggs (see
how-to page), cooled, peeled and carefully cut in half, on the diagonal
2 tablespoons mayonnaise
About 1/4 teaspoon dry mustard
Pinch of Kosher salt & white pepper
Tabasco sauce (optional), to taste

Remove the yolks of the hardboiled eggs, and set white part aside
Press yolks through a garlic press (or mass with a fork) into a small bowl

Add the remaining ingredients, mix to combine

Place the yolk mixture into a pastry bag (with a decorative piping tip) & pipe into the empty egg white cavity

Place eggs on a decorative plate & serve
Garnish suggestions:
-place two chive sprigs on top of each deviled egg
-top with a small amount of caviar and chives sprigs
-place a small strip of pickled pimento on top of each egg
-sprinkle paprika over the eggs

Keep refrigerated until ready to use
