EGGPLANT MELT

 
*1 recipe of Breaded & Baked Eggplants
*Oven Roasted Tomato sauce (store bought can be substituted)
  Sliced mozzarella, two per-serving
  Basil, sliced thinly to garnish

Per-heat broiler to high

On a heat resistant plate spoon or ladle 2 to 3 tablespoons on the tomato sauce (per-serving)

Place two slices of eggplant on top of the sauce

Ladle 2 more tablespoons (of tomato sauce) over each of the eggplants and top with the mozzarella slices

Place eggplant underneath broiler, about 6 to 8-inches away from the heat

Broil until the cheese has melted and it slightly browns, about 2 to 3 minutes

Garnish with the fresh basil and serve


*COOKS NOTE: If using eggplants & sauce that have been made ahead of time (and refrigerated), reheat before using
