OVEN FRIES
About 1 to 2-LBS potatoes, washed & cut into wedges (about ¼-inch thick) and place in water to cover
Canola oil (about 2 to 3 TBSP) to coat
A hefty pinch kosher salt
Pepper (optional)

Pre-heat oven to 425°
Line sheet pans with parchment paper

Drain potatoes thoroughly, towel dry (if needed)

In a large bowl toss the potatoes with the oil

Arrange potatoes in a single layer on sheet pan (may have to be done in patches)

Bake potatoes until golden brown about 25-30 minute (rotating once)

Remove from pan and place on cooling rake to drain excess oil
Sprinkle literally with salt

Cool slightly before serving 

Variations:
Add lemon pepper, cayenne pepper or granulated garlic or onion power before baking
