PALMIER COOKIES
(Puffed Pastry Cookies)
    - one 17.3-ounce package puffed pastry (2 sheets per package), thawed
     - about ¾ to 1 cup granulated sugar
     - ¼ cup sweet butter, melted & cooled slightly 

     Preheat oven to 400° F
     Line a sheet pan with parchment paper 

1) Sprinkle dry flat work surface with sugar
     Place one on the puffed pastry sheet on top of the sugar 
     Roll out to about 18 X 8 and cut in half 

2) Brush one of the halves with the half the butter
     Sprinkle with about 2-3 tablespoon sugar
     Roll half of the sugar coated pastry toward the center, repeat with the other side so the two sides meet in the center
     Set aside & do the remaining puffed pastry in the same manor 

3) Cut each log into 2-inch "leaves" or cookies
     Press the leaves (on each side) into sugar, flattening slightly
     Place on sheet pan, about ¼-inches apart 

4) Bake for 20-minutes
     Using a metal spatula, flip cookies and bake an addition 12 to 15 minute or until golden brown 

5) Cool on cooling rack, store in airtight contain  Yields about 2 dozen Palmier cookies
