½ cup Peanut Butter, creamy or chucky ½ cup Rice Wine Vinegar 2 to 3 tablespoons Soy Sauce ¼ cup Sesame Seed Oil 1 to 2 tablespoons freshly grated Ginger 1 to 2 tablespoons Hot Pepper Flakes Lime Juice to taste, about the juice of two limes ½ tablespoon fresh Lime Zest, chopped finely ¾ cup Canola Oil Fresh Cilantro sprigs, finely chopped (optional) |

Whisk together the peanut butter, rice wine vinegar, soy sauce, sesame oil and grated ginger until smooth Add the pepper flakes and the lime juice & zest Slowly add the oil in a slow steady steam until incorporated Taste to adjust seasons and add the cilantro Store in an airtight container until ready to use Yields about 1 cup Use as a condiment with grilled fish or chicken, or as a marinade As a dressing in cold pasta salads, green salads and more... |
