Peanut Sauce
...something to wake up your taste buds
If you like it spicy, you'll love this sauce!
½ cup Peanut Butter, creamy or chucky
½ cup Rice Wine Vinegar
2 to 3 tablespoons Soy Sauce
¼ cup Sesame Seed Oil
1 to 2 tablespoons freshly grated Ginger
1 to 2 tablespoons Hot Pepper Flakes
Lime Juice to taste, about the juice of two limes
½ tablespoon fresh Lime Zest, chopped finely
¾ cup Canola Oil Fresh Cilantro sprigs, finely chopped (optional)
Whisk together the peanut butter, rice wine vinegar, soy sauce, sesame oil and grated ginger until smooth 

Add the pepper flakes and the lime juice & zest 

Slowly add the oil in a slow steady steam until incorporated 

Taste to adjust seasons and add the cilantro

Store in an airtight container until ready to use
Yields about 1 cup

Use as a condiment with grilled fish or chicken, or as a marinade
