Prawns Cocktail
2 pounds Jumbo Prawns, shells removed & de-veined
2 bottles of Beer, [wine or water can be substituted, use enough liquid to cover]
1 heaping tablespoon
Old Bay Seasoning
1 Thai or Super Chili, pierced with a knife

Rinse prawns and place in a colander to drain 

In a heavy sauce pan, bring the beer & old bay seasoning to a boil, add the chili 
Add the prawns and boil until the prawns turn a bright pink, about 3 to 5 minutes

Drain the prawns, (discrading the pouching liquid & chili) & serve 

Serve with
cocktail sauce & lemon wedges on a bed of shredded lettuce
...or serve 5 to 6 per-serveing on a crisp green salad dressed with a
citrus or basic vinaigrette
