Rolling Compound Butter

When making compound butter, start out slowly and increase the speed of mixer until butter is light & fluffy
















Cut a piece of parchment measures-the paper should
measure about 12 X16-inches (wax paper can be substituted)

Place your butter in the center of parchment  (about 4 to 6-oz)
Fold over the parchment to enclose the butter






Place a straight edge, (like a ruler or the side of a sheet pan),
against the butter (on top of the parchment)

Move the straight edge toward the butter

Fold the ends of parchment to com-
pletely enclose the butter

Label the butter before wrapping in plastic wrap
& storing in the refrigerator or freezer until ready to use
