COCONUT CREAM-MACADAMIA NUT CRUSTED TART |
FOR THE PASTRY CRÈME:
One 14-oz can of coconut milk 1 cup low-fat milk 2 eggs 2 egg yolks 1 cups sugar 3 tablespoons cornstarch Pinch of kosher salt 1 teaspoon vanilla extract 2-oz sweet butter FOR THE CRUST: 2 cups macadamia nuts 2/3 cups brown rice flour 2 (heaping) tablespoons powered sugar Pinch of kosher salt 2 to 3 tablespoons water Assorted fruit for the topping (such as strawberries, mangos & pineapples or bananas), peeling and thinly sliced FOR THE GLAZE: ¾ cup apricot preserves 1 to 2 tablespoons Grand Marnier |
FOR THE PASTRY CRÈME:
In a bowl whisk the eggs & egg yolks together Mix the sugar, salt & cornstarch together and add to the eggs In a heavy sauce pan, scald the coconut milk & milk Temper the eggs mixture by pouring ½ of the hot milk into the egg mixture, whisking while adding the milk Return the egg/milk mixture to the sauce pan and over medium-high heat, whisk until the mixture thickens (careful not to burn the custard) Off heat add the butter & whisk until melted, add vanilla extract Strain custard into a bowl Cover with plastic wrap - just touching the surface of the pastry crème, so not to form a film FOR THE CRUST: Preheat oven to 400°F Grease a 12-inch tart pan In the bowl of a food processor, pulse macadamia nuts, brown rice flour, sugar and salt until mixture is the consistency of bread crumbs Sprinkle in water and pulse until mixture begins to clump together Press into prepared pan, spreading evenly over bottom and up the sides of the pan Bake for 10 to 12 minutes, until shell is golden and crisp Watch carefully to ensure crust does not burn Remove from oven and let cool completely ASSEMBLING THE TART: When ready to serve, pour chilled pastry crème into cooled shell and smooth out evenly over the crust Arrange the sliced fruit over the crème in a decorative manor FOR THE GLAZE: In a heavy pan, heat the apricot preserves & the Grand Marnier until it’s spreadable Spoon or brush the fruit with the apricot glaze Serve after glaze has set with fresh coconut shavings (optional) - enjoy Serves 10 to 12 |
