Turkey Meatloaf

    24-oz ground turkey meat
     2 sausages, casings removed, about 8-oz
     4-oz sun-dried tomatoes, soaked in hot water for about ˝ hour
     1 to 2 Tbsp canola oil
     2 Tbsp roasted garlic
     1 medium yellow onion, finely chopped
     ˝ cup celery, finely chopped
     1 ˝ tsp. dried basil, crushed
     1 tsp dried oregano & thyme
     ˝ cup fresh bread crumbs
     2 eggs, slightly beaten
     Hot sauce, to taste
     salt & pepper to taste
     1 to 2 Tbsp canned tomato sauce, (optional)

     Pre-heat oven to 350° F

1. Sauté the onions and celery in the canola oil until tender, about 2-3 minutes
Add the roasted garlic, cook until just warmed thru
Add the dried herbs, stir to combine and remove from the heat, cool slightly

2. n a large bowl combine the turkey meat, sausage, bread crumbs, eggs, hot sauce and the cooled vegetables, mix well (Best way to do this with your hand)
Season with salt & pepper

3. Form the meat into a loaf and place on a sheet pan lined with parchment paper
Spread tomato sauce over the top

4. Cook the meat loaf until it's all crispy on top & cooked thru, about 1 hour

Serve with Mashed Potatoes, Crisp Green Salad with a lite Vinaigrette and Garlic Bread
Yields about 8-10 servings
