Warm Bacon Vinaigrette
4 slices un-cooked bacon
2 teaspoons Dijon mustard
2 to 3 tablespoons apple cider vinegar 

In a skillet cook the bacon until crispy
Drain the bacon on paper towels, and reserve for
Wilted Spinach Salad
Bacon grease should yield about ¼ cup, (if not add vegetable oil)   

Whisk in the Dijon mustard & vinegar to the bacon grease, mix to combined 

Season to taste

Keep warm in a double boiler or refrigerate until ready to use 

Yields about ¾ of a cup
