2 cups cooked chicken & cut into cubes or strips 1 apple, cut into thin strips 1 cup toasted walnuts 2 to 3 tablespoons sherry vinaigrette baby mixed greens crumbled feta cheese In a bowl, toss the salad green, apples & toasted walnuts Divide the greens onto chilled plates Divide the chicken (evenly) and place on top of the dressed salads Spoon an addition teaspoon of the dressing over the chicken Sprinkle with the feta cheese & serve Yields 2 servings |
