You start out as Link but before you even get to do anything you are turned into a deku (shrub?) by this (sorcerer?). As the game progresses you try to find your way as this (shrub?) and get your old body back. You eventually find another ocarina, (you lost your Ocarina of Time before this game started) and you’ll find a man who will teach you a (‘Song of Healing’?) which will turn you back into your normal self and turn the deku body into a mask that you can put on and take off at will now. This mask will turn you back into the (shrub?) that you started as with all the same abilities. Also as you complete more of this game you can get a Goron mask, and a Zora mask. The with the Goron mask on you can roll up into a ball and roll around, you can get an “upgrade” where as you spin spikes shoot out and allows you to hurt enemies you roll into. This upgrade also allows you to spin faster. With the Zora mask you can swim under water at very fast speeds and while underwater if you press R then you’ll get an electric (I think) force field.
