CRANBERRY NUT MUFFINS
| 1 cup cranberries, coarsely chopped |
| 1/2 cup chopped nuts |
| 1 tbsp grated orange peel |
| 2 cups flour |
| 1 cup sugar |
| 1 1/2 tsp baking powder |
| 1 tsp salt |
| 2 tbsp shortening |
| 1 egg, well-beaten |
| 3/4 cup orange juice |

Preheat oven to 350 F. Grease muffin tins. Prepare the cranberries, nuts, and orange peel. Set aside. In a bowl, mix together the ingredients from the second table. Cut in the shortening. Stir in the orange juice, orange peel, and egg to moisten. Fold in cranberries and nuts. Spoon into muffin tins. Bake 20 minutes. Makes 12 muffins. |
