LEMON YOGURT MUFFINS

2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt


2 eggs (lightly beaten)
1 1/4 cup yogurt
1/4 cup butter
1/4 cup sugar
2 tbsp honey
1 tbsp lemon zest


1/3 cup lemon juice
1/3 cup sugar
3 tbsp water


Preheat oven to 375 F. Stir ingredients from the first table together. In a separate bowl, whisk together the ingredients from the second table. Add the first table mixture until just combined. Spoon into greased muffins tins and bake for 15-20 minutes. While the muffins are baking, mix together the ingredients from the third table. When the muffins are done, remove them from the oven and pierce the tops of each several times with a fork. Brush the syrup over the top of each one. Let the muffins cool in tins for 3 minutes, then on a rack. If you like, make extra syrup and dip the hot muffins into it.
