MANICOTTI
Pancakes:
1 c flour |
1 c water |
1/4 salt |
4 eggs |
Filling:
1/2 t salt |
1 egg |
1 lb. ricotta cheese |
1/4 c parmesan cheese |
1/4 t black pepper |
1. Prepare pancakes by beating flour, water, and salt until smooth. Add one egg at a time. 2. Melt 3 t butter in greased skillet. Tilt pan to distribute batter evenly and cook til firm, then flip the pancake. Pile on plate when done (should be cream colored). Makes approximately 20 pancakes. 3. Mix together filling ingredients. Divide filling equally among all pancakes. Add a couple strips of mozzarrela cheese in each pancake. 4. Bake in oven at 350 F for 45 minutes. |
