Eggplant-Chickpea Stew

Ingredients

  • 1 large onion, choppped
  • 1/2 cup oil
  • 1 1/2 cups cooked chickpeas
  • 3 cups water
  • 1 large eggplant, peeled , cubed and gently steamed
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cinammon
  • 1/4 cup tomato paste, mixed with 1/2 cp water.

Sautee onions till brown. Add chickpeas. Add eggplant, seasonings, tomato mixture. Cook about 25 minutes on medium heat. And..then....serve hot or cold..along with rice!
