Spanakorizo (spinach pilaf)
Ingredients
1 1/2 pounds spinach (silverbeet can be substituted)
1/2 cup olive oil
1 cup chopped spring onions
1 leek, chopped (optional)
2 cups rice (recipe says short grain, but I never use it)
1/4 cup lemon juice
2 tablespoons chopped dill
3 cups water
salt
black pepper
Instructions
1. Remove roots from spinach. Wash very well and drain. tear up the leaves and chop up the stalks.
2. In a deep pan heat oil and gently fry onion and leek (if used) until soft
3. Wash (or soak if necessary depending on what kind of rice you use) rice, drain and add to onion. Cook for five minutes, stirring frequently.
4. Add remaining ingredients and bring to the boil. When boiling add the spinach, stir well and cover. Reduce heat and simmer on low heat for 15 minutes or so.
5. Remove from heat,leave tightly covered and allow to stand 5-10 miinutes before serving.
Serving suggestion:good with grilled meats or fish!
