Vegetable Biryani

   Ingredients:

  • 1 onion, peeled and chopped
  • 2 cups of any vegetables of your choice
  • 4 tablespoons oil
  • 1 1-inch cinnamon stick
  • 2 black cardamom seeds
  • 1 teaspoon black cumin powder
  • 1 teaspoon salt
  • 6 cloves
  • 1 teaspoon coriander
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 4 cups cooked basmati rice
  • Fry the onion in a small amount of oil until they become light brown in color.  Add all the spices to the onions and cook for about one minute.  Add the vegetables you chose to incorporate, and saute them until carmalized, but make sure they maintain their structure and shape.  Add the rice and cook at a low heat for about ten minutes.  Best served with raita.
