80 Shillings Scottish Ale

The Second Coming

 

 

Started: 31 Aug 03 

Bottled: 7 Sep 03

 

Ingredients

1.8kg can Muntons IPA Bitter

1kg Coopers Pale Malt Extract

500gms Barrett Burston Cracked Crystal Malt

500gms Dried Amber Malt Extract

2 x 11.5gm pkts Safale s-04 Dried Ale Yeast

 

Method

Bring 4L of water to boil, turn off heat, slowly add Crystal Malt

(will foam over if added too quickly)

Let steep for 20 mins

Strain, sparge with cold water, boil 'tea' for 10 mins

Mix 2 litres boiling water, can of Bitter extract, malts and 'tea' in fermenter

Top with water up to 23 litres adjusting pitching temp to 26-ish Deg C

Measure Specific Gravity

Pitch Yeast

Alcohol about 5.3%

Analysis

Used IPA Bitter base this time instead of the Glen Brew 80/- Heavy, as  used last time

After the last (exploding bottle) experience, we made sure fermentation was well and truly complete before bottling

Brew nice and malty going into bottle - can still taste Crystal Malt

Lovely rich caramel colour

Some of the bottles from our last attempt at 80/- exploded violently in storage, leading us to suspect that fermentation had not really finished prior to bottling

Taste Test - tried the finished beer after five weeks in the bottle - didn't have excessive carbonation this time (phew).  Brew is very pleasant, definitely 80/- but not as heavy in flavour as the first batch we made - would prefer to use the Glen Brew base that we used in the first batch
