Scout Soup

FOR THAT FIRST NIGHT OUT OR A LAZY NIGHT IN !

 

Our daughter, Tamara, brought this recipe home when she was a Scout Patrol Leader and we’ve been scoffing it for years now.  It’s a wholesome meal that’s really quick to prepare on that first night when you set up camp late or just a plain old “lazy cooking day” at home.  Goes great with any kind of bread - especially Pita - and is naturally followed by lots of Port.

 

 

Ingredients

Many and varied - everything is optional

Make up your own concoction and measures are not important - vary to suit requirements - but here is the idea

 

 Bacon

Onion

Small Potato (fresh or canned Tiny Taters)

400gm can of Diced Tomato (plain or flavoured - Italian, Mexican etc)

310 gm can of Three or Four Bean Mix (avoid those with Chickpeas)  

125 gm can Sweet Corn

125 gm can sliced Champignons

 

Method

Dice Bacon and Onion (as big or as small as you like)

Lightly fry

If you use fresh potato, slice and dice quite small - you may need to par boil to soften

Add all the other ingredients (including can juices)

Add a little water or stock if thinner soup is desired.

Simmer to let flavours mix.

Serve and enjoy

You can experiment by adding Spicy Sausage, chopped chillies etc to jazz it up for a bit of variety.  Best of all, only one pot to clean .. and the kids can cook it while you are checking out the Port …. er setting up camp !
