Coopers Sparkling Ale

Ingredients

Coopers Real Ale

1 Kg LME

25 gms Cascade Hops

1 clove boiled in Microwave (approx 300 ml) for 2-3 mins

Cultured yeast from authentic Sparkling Ale added

To do this, purchase a couple of stubbies of Coopers Real Ale

Drink most of the contents, leaving about a couple of inches in the bottom

of the bottle - complete with sediment

Add a teaspoon of sugar to each and cover top with plastic wrap

to keep wild yeasts out

Allow to culture for a few days then add to wort when pitching yeast

 

Method

Add clove and water to fermenter

Boil Hops in 2-3L water for 20 mins

Cool for 20 mins - Strain into fermenter

Add other ingredients

FG target: 1.012

OG: 1.040

FG reached: 1.011

22 Litres

 

Analysis

Excellent result.  Very similar to store bought CSA.  Not too bitter

Relatively clear with sticky sediment that doesn't stir up too easily

Good carbonation (most to date) with good head retention. Very slight clove aftertaste
