D&B Golden Christmas Wheat

This is a big task - best done some months prior 

to Christmas to allow sharp flavours to mellow

Better still - make during this Christmas holidays 

for the following Christmas to allow it to fully mature

 

Ingredients

Morgan's Golden Sheaf Wheat Beer Mix

500 gms Yellow Box Honey

1 Kg Dry Wheat Malt Extract

1 Kg Light Malt Extract

1.5 Kg Amber Malt Extract

3 Cinnamon Sticks crushed

1 teaspoons Allspice

1 Clove

Zest of 4 Oranges

Juice of 4 Oranges

7 oz Chopped Ginger Root

15 gms Halletauer Hops

15 gms Northern Brewer Hops

1 pkt Morgan's Ale Yeast (comes with can)

Start yeast in water with 1-2 tbspn Malt Extract

Boil 15 gms Hops in 2L water for 30 mins

Add 15 gms Northern Brewer Hops and boil for another 10 mins

Steep for 20 mins - strain into fermenter

Bring Honey, Orange Juice and Spice Mix to boil, simmer for 30 mins

Steep for 20 mins - strain into fermenter

Add Wheat Beer Mix and Extracts

Top with cold water

Pitch Yeast

OG 1.075 FG: 1.024

Alcohol around 10%

23 Litres

 

Analysis

Very active bubbling for 3-4 days then slowed down 

to almost stopped prior to bottling day

Very golden colour

Tasted good at bottling with fruity taste - less spicy than dark Xmas brew

Bottled in Green and brown Grolsch-type bottles and assorted others

Special labels made for Xmas gifts to friends

Mature taste - a beer that you either love or hate beccause of the powerful fruit and spice flavours. For me its a nice special event type beer (couldn't drink it all night) but I would probably throttle back on the stronger spices next time

Very fruity (mainly orange) with allspice background - relatively sweet

Strong alcohol evident

Has flavour characteristics of a liqueur

Would go good with Christmas Pudding or other sweet foods
