Mexican Lager

Ingredients

Black Rock Mexican Lager

1.25 Kg 'The Right Stuff'

45 gm German Perle Hops (9.2%) (a Northern Brewer Cross)

1 x 5 gm pkt Brewing Yeast (came with can)

1 x 3 gm pkt Dry Enzyme (came with can)

 

Method

Boil hops in 2-3L water for 20 mins

Strain into fermenter

Add warmed can of goo

Add The Right Stuff Mix

Top with warm/cold water to make 23 Litres at about 25 -28 deg C

Measure Specific Gravity

Pitch Yeast

Wort took around 18 or so hours to start bubbling and bubbled extremely slowly for most of the week

As usual, the Mexican drop was a light gold colour going into the bottle - just a hint of hops

We seeded and placed half a small red chilli in each of a couple of bottles - arreeba !

 

Taste Test - tried the beer after five weeks in the bottle. Rather nice, somewhat heavier in flavour than Corona that many would be familiar with but with the right colour scheme and similar flavour genre. A good beer for summer food.

The Chile experiment was a huge success - a really nice Chilli flavour but not volcanically hot - but you wouldn't want to overdo it. We shall make a much bigger batch of Chilli beer next time.
