Golden Peach Wheat Beer

Ingredients

Gold Rush Brand Pale Rider Wheat Beer Mix

500 gms Australian Yellow Box Honey

2 Kg Wheat Malt Extract

1.5 Kg Fresh Peaches

Yeast (comes with can)

 

Method

Peel, pit and pulp peaches (produces about 1.2 Kg fruit pulp)

Boil with honey and about one litre of water for 20 mins

Add all to fermenter

Top with cold water to around 26 deg C

Pitch Yeast

Analysis

Super active for 6-24 hours then slowed down rapidly to an almost standstill

Foamed up considerably, throwing fruit out of airlock and blocking vent frequently. Airlock removed several times to unblock. At completion of fermenting a considerable amount of fruit solids remained floating and at bottom of fermenter risking blocking of filler and/or going into bottles.

To avoid this wort was decanted through a strainer into a second fermenter just prior to bottling. Next time will try pureeing the fruit first or else just strain the liquor into the fermenter at the beginning.

Very golden peachy colour with strong peach taste laced with wheat at bottling. Very slight bitter peach tang - perfect for beer.

Mature taste - slight bitter peach tang early on but meellowed after a couple of months.

Has a strong fruity background taste and is ideal for drinking with light meat such as chicken etc (sound like a wine write up doesn't it).

Even my brother (a confirmed Carlton Cold fan) took a liking to it !
