I heard your show on revolting foods last night and thought it was
hilarious! I found this thread which I thought of after hearing
a guy mentioned Rocky Mountain Oysters. One local BBS sysop loved
to eat them..... raw! We always ribbed him about this.... and
also his love of luke-warm beer!

Naw, kim chee's okay. But it takes a manly man with a manly manner
(such as myself) to really enjoy it.
Kim chee is made sort of like sauerkraut - large pots of cabbage and
other vegetables, together with garlic, hot peppers, and spices, are
buried for up to a year to allow them to ferment. They are then
unearthed (many would contend that this is a mistake) and the contents
eaten with reasonable gusto. For those of you familiar with sheep
herding, you'll recognize this as one of the ways to make ensilage.
Like I say, I like the stuff.

Ummm. Kimchee has degenrated to a generic term which covers a range
of spiced, pickled, leafy green vegetables.
Kimchee, the kind available in Safeway -- produce dept, near tofu --
is barely pickled, hot spiced cabbage. Something like American beer,
palatable to most, but not the *real* stuff.
Kimchee, if I recall correctly, originates in Korea, and there it is
hot spiced FERMENTED pickled cabbage. The fermentation process adds
a *great* deal to the "aroma" of the product. The fermentation
process, at least in the old days, was quite uncontrolled, resulting
in various different "flavors". The hot spices tend to mask
(supplement?) any "off" flavors that might be produced. Westerners
are often able to detect the presence of Korean kimchee at a
distance in excess of 40 paces.

I don't suppose you can get it already processed. Campbell's
Kimchee soup would be an interesting diversion... ;)

You got it! I used to watch my dad make yogurt. He'd take
perfectly good milk (not really) and put on a little shelf over
the oil burner until it stiffened up.
