Allium Bisque

A nice, slow-cooking soup for lovers of onions and their relatives.

Heat

1 tbsp. olive oil

I tbsp. margarine

in medium-large pot.

Add

2 medium onions, chopped

2 medium leeks [or scallions], sliced

5 garlic cloves, minced

2 shallots, minced

Cook slowly until lightly browned.

Add

2 medium potatoes, peeled and diced

3 cups chicken or vegetable broth

1/2 tsp. basil

1/2 bay leaf

1/2 tsp. oregano

1/4 tsp. marjoram

Bring to a boil, then lower heat and simmer all day, or all night.
