Garlic Mint Soup
This is a country recipe, so it has country proportions. (The country in question is Spain.)
Crush
2 or 3 medium-large cloves of garlic
Mix with
a pinch of kosher salt
until forming a paste.
Add
a fistful of mint leaves, shredded
a couple sprigs of fresh parsley, chopped
¼ cup olive oil
and mix until oil is absorbed.
Add
1 quart chicken stock
Boil, simmer, and add
15 oz. chickpeas
Serve hot with high-quality croutons.
