There may be a better cheese pie or cake out there. Maybe. But there ain't an easier one.
Preheat oven to 325 degrees. Here's the crust. Crush
10 double graham crackers
Drizzle into crumbs1/4 cup melted butter
Mix and press against the bottom and sides of 8-inch pie plate. Refrigerate.Filling:
Beat until softened8 oz cream cheese (not the easy spread stuff)
Add1/2 cup sugar
1 tbsp lemon juice
1/2 tsp vanilla
Beat well. Add, one at a time, beating well after each2 eggs
Pour into crust. Bake for 25-30 minutes. Meanwhile, for the topping, mix1 cup sour cream

1/2 tsp vanilla
When the pie is out of the oven and cool, spoon topping over pie. Bake again for 10 minutes, same bat temperature. Refrigerate several hours to set pie completely. For additional topping, if desired, try fresh fruit (blueberries, strawberries), canned pie filling, or chocolate. You might like also to mix chocolate shavings into the sour cream topping before baking.
