Cheese Pie

 

There may be a better cheese pie or cake out there. Maybe. But there ain't an easier one.

 

Preheat oven to 325 degrees.

Here's the crust. Crush

10 double graham crackers

Drizzle into crumbs

1/4 cup melted butter

Mix and press against the bottom and sides of 8-inch pie plate. Refrigerate.

Filling:

Beat until softened

8 oz cream cheese (not the easy spread stuff)

Add

1/2 cup sugar

1 tbsp lemon juice

1/2 tsp vanilla

Beat well. Add, one at a time, beating well after each

2 eggs

Pour into crust. Bake for 25-30 minutes. Meanwhile, for the topping, mix

1 cup sour cream

2 tbsp sugar

1/2 tsp vanilla

When the pie is out of the oven and cool, spoon topping over pie. Bake again for 10 minutes, same bat temperature. Refrigerate several hours to set pie completely. For additional topping, if desired, try fresh fruit (blueberries, strawberries), canned pie filling, or chocolate. You might like also to mix chocolate shavings into the sour cream topping before baking.
