Forehead Soup

 

A strange name, but a great soup. (There is a reason for the name.)

 

Medium-heat in a soup pot:

 

1 tbsp olive oil

 

Cut up and add:

 

1 red onion

2 garlic cloves

1 red pepper

 

When wilted but not overcooked, add:

28 ounces canned diced tomatoes

14 ounces red kidney beans

6 cups chicken broth

1 tsp worcestershire sauce

2 tsp oregano

 

Stir. Bring to a boil. Stir in:

1/2 cup rice

Lower heat. Simmer for an hour or more. Serve hot. And hello to the Agranoffs.
