Sesame Chicken Lo Mein

(like revenge, a dish best served cold)

 

This is very simple, especially if you ever purchase boned chicken breasts. Start the day before serving. It still won’t take long to prepare. Serves four.

 

Cut into stir-fry-size pieces:

 

2 boned chicken breasts

 

Medium-heat in a skillet:

 

1/2 tbsp sesame oil

1/2 tbsp margarine

 

Add the chicken pieces and cook until white through, about 5 minutes. Remove chicken. When cool, store in refrigerator.

 

Mix in bowl:

1 tbsp light soy sauce

2 tbsp rice vinegar

2 tbsp sesame oil

2 tsp sugar

 

Cook

4 oz. spaghetti

 

Drain the spaghetti, then add the marinade. Put in a covered container and shake, to distribute the marinade as well as can be expected. Refrigerate overnight.

 

Shortly before serving, add the chicken and spaghetti together. Stir in

 

1/2 tbsp onion flakes

1/4 cup (or so) sesame seeds

1/2 cup (or so) cashews or peanuts

 

Mix well. That’s it.
