Tried and True the traditional sugar cookies will always do, but- why not try our Rasberry Filled Heart Shaped Sandwich Cookies or our delictable Chocolate-Mint Shortbread Cookiesssss.......... .....yummmmmmm......YES!

Chocolate-Mint Shortbread Cookies
Ingredients
~3/4 cup butter
~1 1/3 Cups All Purp. Flour
~3/4 cup confectioner's sugar
~1/4 cup unsweetened cocoa powder
~1/4 mint extract
~3/4 cup miniature semisweet choc. pcs melted (if you dont have mint extract try mint choc. pcs.)save some for decorating.

Directions
~In large mixing bowl beat butter with an electric mixer on medium to high speed about 30 seconds or until softened.  Add about half of the flour, the sugar, cocoa, and mint.  Beat on low speed until combined, then on medium speed until blended.  Stir in the remaining flour.  Stir in the melted chocolate pieces.  If necessary, chill dough 1 to 2 hours for easier handling.
~On lightly greased cookie sheet roll out the dough and cut with heart shaped cookie cutters.
~ Bake 300 degrees for about 25 min, let cool.
~Decorate by dipping the cookie in melted choc.place on wax paper let dry. You can dec. the top with a tube of writing- white icing. You can write Love or Kiss ME or UR 2 CUTE, you can even put your fav. ice cream in between two cookies for an ice cream sandwich.  I used rasberry white choc. ice cream. YUM is all I can say!

Rasberry Filled Heart Sandwich Cookies
Ingredients
~ 1 cup Butter
~ 1 1/2 cups confectioner's sugar
~ 1 egg
~ 1 tsp. vanilla extract
1/2 tsp. almond extract (optional)
2 1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. cream tartar
Directions
~In large bowl, cream tog. butter and confectioner's sugar.  Beat in egg, vanilla, and almond extract.  Mix Well.
~In a medium bowl, stir tog. flour, baking soda, and cream tartar; blend into butter mixture. Divide.
~Working with 1/3 of the dough at a time, roll out dough into desired thickness on a lightly floured surface.  For each heart sandwich cookie, cut out 2 3-inch hearts.  Cut out the center of the One of the 3-inch hearts with the 1 1/2-inch cutter. (You can do this with any sz cutters just make sure one is relatively alot smaller.)
~Place each piece seperately on an ungresed cookie sheet, 1-2 inches apart.  Bake in a preheated, 350 degrees oven until lightly browned.  Cool completely on wire rack.  frost bottom cookie with Pink Frosting and place as open centered cookie on top to form the sandwich.  Also frost the small 1 1/2-inch hearts and serve as seperate cookies.
