Sambucus Nigra

Elderblow Tea
2-3 tsp. dried flowers
1 Cup hot water
Simmer 10-15 minutes
Elder Flower Fizz
* Pick Elder flowers for this recipe on a warm sunny day when rain has been lacking, as the yeast is mainly in the pollen.
5 qts. water
2 Tbsp. Apple cider, or wine vinegar
3 1/2 Cups sugar
12 Elder flower heads
Juice and thinly peeled rind of a lemon
Bring water to a boil and pour into a sterilized container; add sugar stirring until dissolved. When cool add the juice and rind of the lemon, along with the cider or vinegar. Add flowers and cover with several layers of cheesecloth. Let stand 24 hours. Filter through cheesecloth into strong sterile bottles. Store for 2 weeks, serve chilled.
Elder Blow
Gather Elder blooms and remove the stems. Dip clusters into *batter and fry in deep fat heated to about 375 . Fry about 4 minutes or until golden brown. Place on a paper towel and squessze a little orange juice over them. Roll in granulated sugar and serve piping hot.
*batter- 1 Cup flour, 1 Tbsp. sugar, 1 tsp. baking pwder, 2 eggs, 1/2 Cup of milk
