Romantic Recipe's
Raspberry Spinach Salad

2 Tbs raspberry vinegar
2 Tbs raspberry jam
1/3 C vegetable oil
8 C spinach ( rinsed, stemmed and torn )
3/4 C coarsely chopped almonds
1 C fresh raspberries
3 kiwis peeled and sliced

Dressing;
Combine vinegar and jam and blend well while slowly adding oil.
Salad;
Toss spinach with 1/2 the nuts, 1/2 the raspberries, 1/2 the kiwis and the dressing. Top with remaining nuts raspberries and kiwis. Serve promptly.
Lovers Tea

1 C water
1/4 C honey
1 C apple juice
1/4 tsp cinnamon
6 cranberry tea bags

Bring water and juice to a boil, stir in honey and cinnamon, add tea bags and remove from heat. Let stand 1 hour add 6 C cold water. Serve over ice.
( store in refrigerator up to 3 days)
Sea food, avocado and heart of palm salad

1 1/2 C sour cream
1 1/2 C mayonnaise
1/2 C fresh lime juice
5 green onions chopped
3 jalapenos seeded and minced
1 1/4 tsp chili powder
3/4 tsp dry mustard

Salad
3   7 - 1/2 oz cans hearts of palm drained
3 large tomatoes
3 large avocadoes peeled and pitted
Red leaf lettuce leaves
2 1/2 lbs cooked medium shrimp peeled and deveined

Dressing;
Combine sour cream, mayonnaise, lime juice, green onions, jalapenos, chili powder and mustard in a bowl. Season to taste.
( can make up to 2 days ahead and store in refrigerator)

Salad;
Cut palm hearts, tomatoes and avocadoes into 1 inch pieces. Combine in a medium bowl and cover lightly with dressing. (just enough to coat) Line a a platter with lettuce leaves, mound vegetables in center, surround with seafood, serve remaining dressing on the side.

This recipe is quite large, it has a beautiful and romantic appearance, but for a 2 person party you may want to cut it quite a bit !
