Tomato Aspic (submitted

Ingredients: 4 c. of V- 8 juice 2 T. of gelatin 1/2 c. of cold water Soak gelatin in cold water. Heat V- 8 juice until hot but not boiling. Dissolve gelatin in the hot juice. Mix well. Refrigerate until geled. You may add additional spices to cater to your own tastes. This can be tolerated at the stage when you're taking in Carnation instant breakfast. It'll add some variety to your dull routine. |
Geled comsumme' Ingredients: 1 can of comsumme' (I use beef consumme' by Campbell soup) Lemon to taste This is as easy as it gets. Refrigerate can of soup. Eat cold with lemon to spice. This is great in the summer! Lemonade (can use lime if prefered) Ingredients: 10 lemons 1-2 c. splenda or equal Juice lemons removing seeds as you go along. Put in a 2 QT. pitcher. Mix in sweetner. Fill the pitcher with water and ice! Voila........a great summer drink with lots of Vitamin C and a minimum of calories. |

Eastern Lentil Rice Pilaf (submitted

Ingredients: 4 C. water 1 C. dry lentils 1 1/3 C. uncooked brown rice 1/3 C. chopped fresh parsley 6 T. lemon Juice 3 T. vegetable oil (I use olive oil) 1 t. minced garlic 1 t. salt 1/2 t. ground cumin 1/4 t. ground black pepper Cook rice according to directions. Bring water and lentils to a boil then simmer for 30 minutes (until the lentils are tender.) Drain. Wisk in the rest of the ingredients. You may serve warm or cold. Great source of protein! |
Raspberry
Ice cream

Ingredients: 4 eggs (or equivalent in egg beaters) 2 bricks of low fat cream cheese 1 C. Splenda or Equal 2 baskets of washed raspberries 1 C. 2% milk 1 T. lemon juice Run raspberries through blender til liquid. Then pour through a fine strainer or cheese cloth to remove seeds (I tried it without removing seeds and its awful.) Cut the cream cheese into small pieces and put in blender (after you rinse out raspberry seeds) with enough of the milk to make a thick liquid. Blend. Put in with the raspberry liquid. Blend eggs, sweetener, the rest of milk (if there is any,) and lemon juice. Mix all ingredients together. Put into ice cream maker and freeze according to directions for ice cream maker...I let it run until it stops on its own. Freezers run $20.00 at WalMart if you don't have one. Eat when ready...it tastes best when freshly made! Enjoy!!! This is a great source of protein! |
Coolwhip

Ingredients: 2 nonfat yogurts in any flavor you like 1 12oz. coolwhip lite 1 graham cracker pie crust ( this can be made by using graham cracker crumbs, splenda or equal, and butter or pam and pressing into a pie plate...or you can use a store bought keeping in mind they use sugar in theirs) Mix yogurt and coolwhip together (may use sweetener if you wish...I don't) until fully blended. Pour into pie crust, cover and freeze for 4 hours. Serve and enjoy! |
