4 Weetabix crushed 1 1/4 cups all purpose flour 2 tsp baking powder 1/4 tsp salt grated rind of 1 lemon 1/3 cup butter 1 cup sugar 2 eggs 2/3 cup milk 1 1/2 cup fresh or frozen blueberries 1. In a large bowl combime weetabix, flour, baking powder, salt and rind. Set aside. 2. In a large bowl cream butter and sugar until fluffy, beat in eggs one at a time. 3. Stir in dry ingredients alternately with milk. 4. Stir in blueberries, just until combined. 5. Spoon into large paper lined muffin tins, filling to top. Bake in 400 degree oven about 25 minutes or until golden and firm to the touch. Makes 12 large muffins |
