| 3 zucchini, sliced 1 onion chopped Cook onion and zucchini until tender 1 can cream of mushroom soup 1 cup sour cream 1 cup grated carrots Stir soup and sour cream together, add carrots, fold in drained zucchini and onion. Topping: one half cup melted butter, one package uncle ben's (country style) stuffin such Spread half of uncle ben's mixture in bottom of casserole. Spoon zucchini mixture over it. Sprinkle rest of uncle ben's mixture over top. Bake 350 degrees, 30-45 minutes (If oven runs hot bake at 325 degrees) If top gets too brown cover with a layer of tin foil. |
