Nancy’s Spaghetti

Here is a recipe that has been passed down through my mother-in-laws family. I am the 5th generation to have received it and I have passed it on to my children and grandchildren at this point. We all love it and I agree with you about mothers-in-law. I liked mine just fine!

Elbow macaroni: Prepare according to package directions to serve 6 people. Sauce:

  • 5 T bacon grease (don't sub. any other it changes the flavor.)
  • 2 cups chopped onion (medium fine)
  • Saute the onions until clear.
  • One large can of whole tomatoes, drained
  • One large can of crushed tomatoes
  • 1 tsp salt(or to taste) and pepper to taste.
  • 1-2 tsp garlic POWDER to taste.
  • 1 tsp. chili powder (do not add more as it changes the flavor and this is not meant to be a spicy dish.)
Stir to blend.
Blend, bring to a boil and reduce heat. Simmer, stirring frequently and breaking up whole tomatoes for 15 to 20 minutes or until thickened. Add the sauce to the drained macaroni. Add one pound grated cheddar cheese. (I usually use medium cheddar.) Stir well to blend. Put into a casserole dish and cover with one cup grated cheese and sprinkle with Parmesan. Bake at 375 degrees until the cheese is melted, lightly browned and bubbly.

Serve with fresh cucumbers and sliced onions marinated in the refrigerator for at least 1 hour in a mix of one part vinegar to 4-5 parts water, and a little salt and pepper. ENJOY.
