Morocco Means Tagine

Of course Morocco does not really mean tagine. Tagine is this wonderful stew, with lamb, beef or chicken, vegetables, and spices like cumin and coriander, all cooked in a clay pot with a conical top. It is almost worth traveling to Morocco just to enjoy a good tagine.

I really loved Morocco. It’s in Africa, you know, with both Mediterranean and Atlantic coasts. The whole country is not, as I imagined, a vast desert. There are incredible mountains and forests. In some places, the earth is red. There are palm trees further south, though, and heat.

It is not anything like any other place I’ve ever been. It is a country of contrasts. It is African and Islamic, with people speaking Arabic and wearing traditional clothing while talking on cell phones. It is exotic and beautiful. It has toilets that flush (if you are lucky), and ATMs and donkeys as a major means of transportation for many people. There are half-finished buildings and roads all over the country. There are souqs (markets)in Medinas (the old part of cities) that are over 1,000 years old, where you can buy dates or fresh meat or Moroccan hand-crafts. Nothing is a set price; you bargain for everything.
