Okay, here's my favorites:

Nutella Fudge

Ingredients:

3 cups sugar
3/4 cup milk
1 tbsp butter
1 tsp vanilla extract
1 jar Nutella

Turn stove to medium-high. Mix sugar and milk in saucepan. Stir well to mix, then constantly. Bring to almost softball stage on the candy thermometer. Add Nutella. Stir until smooth, then constantly. Bring to exactly softball stage. Remove from heat. Add butter and vanilla. Beat for several minutes (with optional electric mixer, I never use one, but have at it if you want) until stiff. Turn onto a buttered pie plate (or regular plate, or casserole dish, or whatever you have lying around). Cool for about 2 hours.

Reduced-Fat Chocolate Amaretto Mousse

Ingredients:

1 package (8 oz) fat-free cream cheese
1/3 cup powdered sugar
1 tsp vanilla extract
1/2 tsp almond extract
1 envelope unflavored gelatin
1/4 cup cold water
1 cup reduced-fat semisweet chocolate chips
(Hershey's is the only company that I know that makes 'em)
1/2 cup skim milk
2 cups Cool Whip
recipe calls for Light, but I used the regular 'cause my grocery store didn't have Light Cool Whip)

In a food processor bowl (or a big bowl if you're using the electric mixer), combine FF cream cheese, powdered sugar, vanilla extract, and almond extract. Process (mix) until smooth.

In a small bowl, sprinkle gelatin over water. Let stand for 3 minutes.

In a medium microwavable bowl, place chips and milk. Microwave on high for 1.5 minutes. Add gelatin mixture, stir until gelatin is dissolved and mixture is smooth.

Pour chip mixture into cheese mixture, process (mix) until smooth -- about 2 minutes. Add Cool Whip, process until blended, about 1 minute.

To be fancy, pour into individual dessert dishes. To be lazy like me, leave it in the bowl. Cover, and refrigerate for 2 hours.

Good garnishes: fresh fruit, esp raspberries, strawberries, peaches.


Spinach Tart

Ingredients:

2 10oz packages of chopped spinach
2 eggs (or 4 egg whites, I'm too lazy for that)
1/4 cup Parmesan cheese
1 tsp nutmeg (I usually omit this)
1 tsp salt (I -never- omit this! I'm a salt freak)
1 clove minced garlic
1/4 teaspoon pepper
1 cup cottage cheese OR 1 cup ricotta cheese
1/4 cup mozzarella cheese (optional)

Heat oven to 350. Coat a pie plate (9-10") with cooking spray. Cook both the packages of spinach according to directions. Drain spinach well.

In a medium bowl, combine spinach with the rest of the ingredients (except optional mozzarella). Spread evenly in pie plate. Bake 15 minutes. Sprinkle mozzarella on top, bake 5-10 more minutes.
