Fruit Gazpacho

 

         2 lb strawberries (take off the green thingies)

         2/3 cup sugar

         1 sprig mint

         2/3 cup sweet white wine or 1/2 cup apple juice

         plain yogurt

         a handful of blueberries

                                                                               (strangely enough, neither of these are in season the same time as strawberries)

         a handful of raspberries

         1 peach or nectarine, chopped fine or 1/2 papaya,

            

        

 

      Puree the strawberries, sugar and mint in a food processor and strain into

      a large bowl. Add the wine and stir well. Pour the soup into serving bowls

      and serve with a dollop of yogurt and scattered with blueberries,

      raspberries and peach ( or whatever is fresh). Serve immediately, or

      chill.
