Gluten
Free Cheese Cake
Now
I warn you, this is complicated...NOT!
The
crust:
2 cups GF cereal (corn flakes)
3 T melted butter or margarine
2 T of sugar
1/4 t cinnamon
1/4 t nutmeg
crush
cereal. add remaining ingredients and mix. Pat out
into a 10”
spring form pan; reserving a table spoon
to top the
cheesecake before baking.
The
cheesecake:
3 8oz packages of cream cheese
4 eggs
1 cup of sugar
1 t vanilla
Soften
cream cheese, combine with eggs, sugar and
vanilla. Mix with electric mixer until well
blended. Top
with remaining crumbs. Bake in preheated
oven at 375 degrees for 35 to 40 minutes. Refrigerate
for
several hours before serving.
