Mango Rice

 

         2 T oil

         1 slice ginger, chopped

         1 clove garlic, chopped

         pinch cardamom

         pinch salt

         1 cup mango nectar

         1 cup rice

         1 mango, peeled and chopped

         1 mango, peeled and chopped

            

       

 

      Heat oil in small saucepan over high heat. Add onion and garlic, cook 2-3

      minutes, add remaining ingredients and cover. Simmer 10 minutes over low

      heat, remove from heat and let stand 10 minutes before serving.
