Thai Papaya Salad

 

        1 papaya, preferably green, grated (sliced if ripe)

        6 cherry tomatoes

        a handful of bean sprouts

        juice of 1 lime

        1 clove garlic, minced

        2 red chili peppers, minced

        1 Tbsp brown sugar

        1/2 tsp salt

        a handful of roasted peanuts

            

       

 

      Place the grated (or sliced) papaya and daikon in a bowl. Halve the cherry

      tomatoes and add them to the bowl with the bean sprouts and peanuts. In a

      food processor combine the remaining ingredients with a little of the

      papaya seeds.

 

      Pour over the salad, toss and serve.
