LEMON GRASS SYRUP

INGREDIENTS:
55g (2 ounces) castor sugar
2 stalks lemon grass
1 whole star anise

Place the castor sugar into a saucepan along with 300ml (10 fl.oz) of water. Heat this until the sugar is dissolved- be careful not to burn or brown the mixture. Crush the lemon grass stalks and add to the mix in the saucepan along with the star anise. simmer for 3 to 5 minutes.

*~*To this, you may add fruit of your choice- pear or star fruit  is very good. Thinly slice the pear/ fruit, and add it to the mix after the three minutes. Poach until the fruit is tender on a low heat.*~*

Leave to cool.
Remove the lemon grass before serving, but you can leave the star anise in the mix for decoration.

The juice/syrup may be added to vodka or gin with sparkling water for a cocktail.
Or, use the juice.syrup to add to other fruits to make a special fruit cocktail.
